Loaded lunch taco bowl

Salad, but not sad. Seasoned beef, crunchy lettuce, black beans, corn, guacamole and Mexi Shred come together in a loaded lunch bowl with colour, flavour and enough cheese energy to make desk lunch feel less predictable.

Ingredients

  • 2 cups iceberg lettuce, shredded
  • 1 cup The Cultured Dairy Mexi Shred
  • 250g beef mince
  • 1 tbsp taco seasoning
  • ½ cup corn kernels
  • ½ cup black beans, drained
  • 1 tomato, diced
  • ½ red capsicum, sliced
  • ½ cup guacamole
  • 2 tbsp sour cream
  • 1 lime, cut into wedges

Method

  1. Cook beef mince in a pan over medium heat.
  2. Add taco seasoning and cook until browned and fragrant.
  3. Add lettuce, corn, black beans, tomato and capsicum to a bowl.
  4. Add cooked mince and toss through Mexi Shred.
  5. Top with guacamole, sour cream and lime.
  6. Serve immediately.
